Traditionally linked to the area of Parma since the 3rd century B.C., the time when the first salting and drying techniques were experimented on pork legs. It is characterised by a particularly mild and delicate taste. The prosciuttos bearing the Parma mark are matured in the Levoni plant in Lesignano de’ Bagni, near Langhirano, and comply with the strict standards of the production regulation. Pork legs come exclusively from heavy pigs weighing at least 160 kg, bred in northern and central Italy.

It's the real thing but.....
Didn't like the packaging - there are no separators, and it's nearly impossible to remove a slice at a time without them. They arrived in two vacuum packed 8 oz packages and I agree with one reviewer who said there's too much fat. You usually find this with the end pieces. The flavor is authentic, if a bit too salty, so they're not trying to pass something of a lesser quality off as the real thing - it IS the real thing. Still, not the best I've had. There's an Italian food store in the Pike Place Market in Seattle, but that's a 120 mile round trip for me. They slice it paper thin for you from the whole leg, so you know exactly what you're getting - and they provide separators. They give you a choice of salty or sweet, having a leg of each. I prefer the sweeter type, so the salty isn't my favorite. Still, if you don't have access close by and absolutely must have real prosciutto, this will do. The price isn't outrageous either.

Great ham, good service
I believe it would be most objective to write a review for this product with the seller named. The seller is a major factor involved in the process: they cut the ham and package it. Even if the ham is good, their packaging may ruin the taste, for example.I purchased (quite a lot of) the ham from Carmen & Lola. Although I'm not some expert in Parma ham, I must say the quality is terrific. As I am enjoying the ham almost 1 month from the day I received it, I still get that *heavenly* taste that made me fall in love with Parma ham.The package comes vacuum-sealed, and size-customizable if you email Carmen & Lola (i.e. they sell the ham by the pound, but you can ask for instance to receive 4 packs with 0.25 lb each.) One thing that doesn't completely satisfy me is that they didn't have separators to put in-between the slices. As such, it asks from buyers some effort and patience to separate them.
