The unit does not have temperature control, although you can control the power into the heating elements to adjust the rate of heating. It can be set to 500 watts, 1100 watts, or 1800 watts.

Does it require cooling water? How does it cool down the condensates?

Yes, a trickle of water flow is required. The parts to do this are included. Distillates flow through a cooled water jacket and are condensed.
