What if I haven’t use for long time will it crack

1.Do not soaked in water for a long time: The wooden sushi rice bowl can not be filled with water or soaked in water for a long time, the wood will expand when it absorbs water, which will lead to cracking.

2. Avoid sun exposure and cold wind: Because the wood itself will expand and contract with heat, it should not be directly exposed to the sun or cold wind. If it is not used for a long time for more than 2 months, the sushi bucket can be wet and sealed with a large plastic bag to prevent the air from taking away the moisture.

When storing wooden sushi rice bowl at ordinary times, you can put a little water to make it absorb water and keep the wood saturated and moist.

Question 2

We want to know how to get it clean without washing it? You mentioned vinegar or tea but that just won't cut it. It already has a crack.

I fill mine with vinegar and water. Then let it soak. After about 20 minutes I rinse it under running water. When done rinsing I dry it thoroughly with paper towels

Not sure which size to get.  Wouldn’t the largest size be the best option as it has more surface area and would cool the rice the fastest?

I think that unless you're planning on making sushi on a restaurant scale, the largest would be overkill.  I decided that for making sushi for myself and one or two friends, the 13" was sufficient for my needs.  It would be fun to have more than one size, to  "cover all the bases", but I don't have the kitchen space nor the money.  I don't think it's necessary to do more than cool the rice to handling temp. I don't think "cold" is the purpose.
