How can i tell that my credit card holder is rfid

Your best bet is to have an RFID chipped credit card in your questionable wallet, go to a store or gas station pump that has tap-to-pay, buy something small or that you would normally purchase, and see if it the tap-to-pay reader can pick up your credit card *through* the wallet without pulling the credit card out of the wallet. If it *can* still scan your card, then your wallet *isn't* RFID blocking. If it *doesn't* pick up or sense your credit card it *is* RFID blocking. Hope this helps!

Are there slots for cards on both sides of the sheets, or only one side?

Only one side, There are 96 card slots in total.

The 'cards' i need to store are the thickness of three credit cards. would they fit? (length & width are perfect.)

To be honest it's really only designed for regular sized credit cards. The sleeves that hold the cards are just basic plastic which serve their purpose however putting something in too thick might cause the sleeves to tear that being said it's still very handy
