The tomato test is just something that is a marketing gimmick. It means that it has a reasonable bevel out of the box, but it also means it is NOT too sharp that the high bevel slides off the skin. That means it is only moderately high sharpness, not that it is razor sharp.

Also, out of the box sharpness means nothing.  Every knife has retention based partially on the hardness of the blade. And the harder the blade, the more likely it is to chip. OR if it is too soft, like a victorinox, the edge will roll over (but it is easily realigned with a hone) So out of box sharpness means nothing.

ALSO this knife is a meat cleaver 9not a bone cleaver) you want a mid level of sharpness and a mid level of hardness for this style knife. And that's what this is.
