Cook a little less than directions
Definitely cook it El Dente. Although I overcooked it slightly it still came out OK. Flavor was good. Mixed it with tahini sauce and some chopped veggies and diced chicken for a quick dinner.

Omg my first time eating these and my hubby loved it. Add shrimp and veggies. Sesame oil and soy sauce. So good

Great Buckwheat Noodles
Great product! When I was looking for buckwheat noodles to purchase, I found myself disappointed by how many do not disclose buckwheat content compared to wheat content. So I was excited to find this product which promises 100% buckwheat. The noodles cook in a timely manner and it is easy to achieve a wonderful noodle texture even when no wheat flour is used at all. They are a little expensive is the only downside.

Excellent option if you are gluten intolerant
Tasty and gluten free, but crazy expensive. The package states that it is for 4 servings, but it is really more like 2.5 servings. For almost 10 bucks, that is really pricy. But these are the only udon noodles that we have found without wheat.

Yummy, Healthy, and Gluten-Free
I love these 100% buckwheat noodles. They are delicious - they do have a bit of a grassy flavor, but I enjoy the taste. I cook gluten-free at home, due to ocular rosacea; gluten makes this worse. These noodles are best, to me, when rinsed after cooking. They reheat nicely. I'm sad that Whole Foods has stopped carrying them in stores - when I come across them, I buy multiple packages. The noodles have lots of fiber, and generally, are tasty and satisfying. I'm glad these exist.

Do not buy
I am celiac and gluten free. I ordered these soba noodles on Amazon because I could not find gluten free soba noodles at any grocery stores near me. My hopes were very high. I cooked the noodles per instructions on the package. They turned out squishy and all of the noodles mashed and stuck together. Disgusting and almost inedible. I will never be ordering these again.

Love the taste of the noodles.

I’m not sure if this is normal for buckwheat noodles, but after cooking them according to package instructions they fell apart when I attempted to stir fry them first lo mein. I’m not sure if I needed to cook them for a shorter amount of time, but for how expensive these are, I was a little disappointed. Still, they’re a decent option for gluten free lo mein noodles with a better texture than many other gluten free noodles.
