Fresh and Clean from Small Family Farm!!!
This Black Nile Barley was amazingly fresh and free of debris or insects! The black, actually a deep purple pigment, has high antioxidant levels of anthocyanin which is excellent for your health. I am switching to Black Nile Barley in place of rice, which has little nutrition. Black Nile Barley is a whole grain, is dehulled, and not only high in anthocyanins, but high in fiber so it does not cause constipation like rice does. I used this simple recipe to cook it. Take a cup of the Black Nile Barley and rinse it with cold water in a strainer. Place it in a pot that will hold at least 5 or 6 cups. Place rinsed barley in pot and add 2 3/4 cups water. Do not add salt. Cover the pan with tight fitting lid, and bring to a boil. Reduce heat to a very low simmer, cover and simmer for about 70 minutes. Remove from heat and fluff with a fork. It is great to make a bowl with. I put about a half cup of barley or so in bottom of a bowl, and add a tossed salad on top. Top with either Boom Boom or Bang Bang sauce. The barley has a delicious nutty flavor with a soft chew to it. It is a super healthy whole grain with lots of nutrition!

World Class Product I Highly Recommend It.
This is top quality organic Purple/Black Barley - hey folks do a Google search and learn about this magnificient family farm. They are an "old-timey" tribe of family farmers who go back about 200 years! Gee whiz! They have been farming FIVE GENERATIONS - they almost lost their farm a few years back but hung on for dear life and are very resilient. Yes, it is a bit pricey but SO delicious. I soak these grains in purified water for THREE DAYS AND NIGHTS until it bubbles and ferments. That naturally "sours" the grain and TRIPLES the protein content, dramatically reduces the carb content and makes it far lower on the glcyemic index. Cook it at very low simmer after soaking fermenting it for about 3 or 2 days - it is done fermenting when a bunch of bubbles appear. Purple Black barley is originally from Tibet and FAR more nutritious than plain old beige tan brownish barley. It is a massive amount of xyanthinins antioxidants and is a high protein grain. This is non-hybridized ANCIENT GRAIN and of course, NON gmo. SUPPORT YOUR AMERICAN FAMILY FARMER !!!!

Wonderful
We love this stuff. It's chewy and tasty and soooo good for you. Is it spendy? Yeah, a bit, but honestly, I've bought it before and I'll buy it again. We are a whole-food plant-based household and a variety of grains, fruits, greens, beans, and veggies are where it's at for us. And color matters here, folks. The darker grains (not the dyed or sprayed versions, just the real deal) have so many benefits (anthocyanins come to mind here). So, yeah, we love it. Try it out! You'll probably love it too.

Excellent product at a fair price. This is an especially good choice if you're using a resistant starch protocol for colon restoration, as it invokes multiple fermentation pathways with its beta-glucans and anthocyanins.
