Is there a lid that will seal instead of just sitting on top?

No lid -- on top, sealing or otherwise. Just the pan. I use it to hold a humidifier in case it leaks.

I saw that it is safe to use up to 200°F, but is it tall enough to accommodate a Sous vide tool without tipping over?

It’s safe. I left it all alone working for 48h with no problem.
