Pectinex works to remove pectin from any fruits that have pectin. There is no aftertaste, but we do not recommend soaking the fruits for too long since they will get water logged.

How long to soak citrus peels only? And do they need to be refrigerated while soaking?

We recommend at least a few hours to overnight in the refrigerator.

Yes, Pectinex can be used in wine to break down the pulp and make processing more efficient.
