I used to buy this in Paris, from a shop on the Left Bank, so it's great to be able to find it on line. It's always been expensive, but for me it's worth it as the flavour is exceptional. Really nutty. I especially love it on avocado.

Agree with the guy below me, this is a delicately flavored oil. It does not hit you between the eyes the way hazelnut oil does. BUT it like having the essence of pistachio-dom floating on your tongue. I can't imagine anything on earth that a handful of crushed pistachio nuts and a teaspoon or two of this wouldn't elevate to a $15 appetizer level. We love it over beets and goat cheese. Baking with it to make pistachio shortbread is also wonderful. Basically, any pistachio oriented dish will be kicked up a big notch by its addition. Once you start strewing pistachios over food, it's hard to stop. A little blood orange balsamic is a perfect compliment. Of all the nut oils we've tried, this is our favorite. Will reorder -often. Expensive, but worth it.

Me and my Mom was needed this for our pistachio cake, the recipe called for pistachio extract, but you can substitute pistachio oil and it'll boost the pistachio flavor better than the pistachio extract. The recipe called for almond extract to go into the cake, the pistachio oil went into the frosting, when we first opened the pistachio oil it had this rich aroma of roasted pistachios, and when the cake was done the almond flavor and pistachio flavor complemented each other perfectly. Mom was very happy with the results especially since this pistachio oil is not that easy to find, I purchased all the other ingredients from our local grocery store, but the pistachio oil was the one ingredient that I couldn't find anywhere, so I found it on Amazon for a reasonable price, ($10.99), so thank you Amazon.com. One more thing; I would have loved to have posted the recipe on my review, but it's actually 2 recipes; one for the cake and one for the frosting. If anybody would like these recipes please send me a comment to let me know, and I'll gladly send these two recipes.

I will buy it again. It's not overwhelming in flavor, which is awesome. They've built a great product!
