So we literally threw out all the crap and bought organic INGREDIENTS, emphasis on ingredients from the bulk food isle. Its hard to maintain a healthy diet on rabbit food. Starch is king in our house. Since we are also trying to loose weight, no flour, nuts, seed, avocados, and most of all, NO OIL. With little to no salt or sugar. Once the Doug Lyle Pleasure Trap has been reset, its easy to do. So the next thing to do is find the tools to make food easy as heating up processed foods. The Instant Pot is it. We own the mini for traveling (3 quart), the 6 quart is our main appliance and for soups, and we eat a lot of bean soups, you NEED the 8 Quart Instant Pot or you will get boil over issues. Next is to find a cook who follows Dr. John McDougall, Dr. Michael Klaper, Dr. Furhman, Dr. Caldwell Esselstyn, Dr. Dean Ornish, Dr. Collin Campbell and Dr. Michael Greggor's diets. Hence, that leads us to over 100 Vegan Instant Pot cookbook authors. Chef AJ, Jill McKeever Jill Nussinow (highly recommend) and Cathy Hestor are the books that make it easy, enhance the flavors, and adhere to the above mentioned MDs dietary guidelines to reverse dietary illnesses and maintain optimal health. Just what I needed.
Just what I've been looking for. I've already sent back 3 cookbooks that were garbage. I can just make the recipe and not make adjustment for SOS. She's done it all for me. I love the full page color photos. Very inspiring. The recipes are simple, her instructions are detailed. I love soy curls and so happy that she has included these amazing edibles in her recipes. I follow her on you tube and she is great. You won't be disappointed.

Woot, Woot!!
I love Jill’s recipes. I have tried so many that are right down awesome, that I just write her recipes in my cookbook knowing they will be good, prior to testing them. We made one recipe once a week we liked it so much, and that is not usual for us. I like variety, but this recipe, Instant Pot Southwestern Hominy Stew is just fabulous! ( I add 1 bunch of cilantro stems, not leaves, chopped finely and I put 1 tablespoon of maple syrup in the bowl when serving). It is better the 2nd day even. We made her barbecue cabbage sandwiches and these were just terrific. Who knew? We made the Austin Curly Stew last night and it was so easy and a huge hit. My husband said to triple it next time. You can’t go wrong with Jill’s recipes. They are winners, like she is. There are more that are terrific, but I would be just repetitive. Get the book. It is a great plant-based cookbook.

Some nice recipes, but not quite what I expected
I bought the book because, as a vegetarian, I'm always looking for Instant Pot recipes that are quick, with easy-to-find ingredients, and are heart and lifestyle healthy. However, though the book promises that it uses items you can find right in your pantry, that's really only true if you first go out and shop for some items that are not so easy to find unless you're willing (at least in my location, which is very rural) to hit every supermarket in driving distance. Some of the spices required, for instance, are not found in our main supermarket. I happen to love smoked paprika, for one example that is used in the book, but haven't been able to find it locally in quite a while. Plus, even though I've been a vegetarian for over forty years, I had never even heard of "soy curls." There are a number of items I'll have to order online if I want to follow the recipes exactly. I suspect I will be substituting ingredients a lot instead. My main surprise, though, was in discovering that this really isn't a specifically "Instant Pot" cook book. The reason I say this is that many the recipes, though they are cooked in the Instant Pot, just use it on the Saute function and don't take advantage of the pressure cooking features. They could as easily be made on the stovetop. I also saw some that used some of the Instant Pot functions to prepare the dish, but then had to be finished in a standard oven. Others are actually slow cooker recipes, which is fine, since Instant Pots have a slow-cook feature, but they aren't actually "Instant Pot" recipes. I suppose, since the device has all of these functions, and the recipes can be made in the Instant Pot, we can give the book enough leeway to call it an "Instant Pot cook book." It just wasn't what I thought I was buying. After reading through all the recipes, though, I find a number that we will probably use, and which look to be pretty tasty. The combination of ingredients (the ones I'll be able to find ... and there are enough of those to get a decent amount of use out of the book, to be fair) look like they will work well together, and the preparation of most of the recipes appears to have been given a lot of thought and work to get things right. None of them are really difficult to prepare, as far as I can tell, even though many don't really put the Instant Pot to its best use. I will probably be substituting a lot, for ingredients I can't find locally, and I might even be brave enough to order a package of "soy curls" from Amazon to give them a try. So, I'm giving the review four stars, because, though it's going to take some tweaking, I think the book will provide enough variety that my family isn't moaning, "Not Again!" when they see me haul out my favorite Magic Cauldron.

Hi, I watched Jill on YouTube and I am so glad she wrote this book. I don't care that there are not many recipes in here, but I love my Instant Pot and trying different things, she tells you how it is, I learned of new ingredients, ordered them, happy I did. Learning all the time about how to use my electric pressure cooker. Thank you Jill for a great book! I hope you do another one, I am still working on this one! A nice addition to my plant based book library! Great job! Please read all the reviews, I did, then I got it. Not sorry, it is a nice book. Not a ton of recipes, but nicely done. I appreciate the work it took to write this, great pictures, great recipes! Now I am starving for a Sloppy Joe! :)

Very Disappointing
'Luv Jill McKeever, but this book is very disappointing. The book has 92 pages and 35 recipes - not so great for $18.85!! The photos are okay, but 3 of them are so basic there's no reason for a photo (one is a photo of cooked garbanzo beans; another is a photo of a big bowl of uncooked rice!! Still another is a photo of cooked Jasmine Rice - just plain cooked rice!) I'm keeping the book because it has helpful charts and some good recipes, but it's really a very sparse cookbook for charging $19.00.

Great food made healthy and without effort...
A great book from a very passionate person. Anyone trying to make great tasting whole food plant based meals without added oil should get this book. The author, Jill McKeever, is fabulous. And shares what she's discovered through experimentation. The book delivers recipes that worked for her "average" american family that included two growing teenagers. The results are excellent and will open the door to eating healthy. This book on oil free cooking is counter to thousands of books and cooking shows who worship their oil and butter. In summary, the food is tasty, the ingredient list is simple and straight forward, and the recipes are easy to follow. I highly recommend this book.

Quick and really straight forward to cook and a pleasure to eat. Good use for someone who is new in that way of cooking and eating. Also very handy when in use while preparing the food.

Fast and easy recipes.
These recipes are perfect for the traditional home cooking meals we have all come to enjoy. The only difference, they are tastier and healthier for you. Cooking in the Instant Pot makes clean up a breeze and cooking fun. These recipes are sure to please everyone!

Great for the whole family plant based or not.
such great recipes. Easy to put together. Many are very quick to cook. I'm amazed at how few ingredients end up being so tasty. Every recipe I've tried has been very good and added to my regular menu to be repeated on a regular basis. I would recommend this book strongly to every home , whether you are plant based or not the family will enjoy these meals.

Very US biased
I really wanted to love this book because I love Jill's YouTube channel and I think that is part of the problem. These aren't new recipes, they are ones she has already shared on her channel. Whilst it is still good to support someone offering so much for free by buying a cookbook, it is frustrating that so many of the recipes rely on American branded products (with no suggested alternatives for those of us who don't live in the USA). Soy curls are used over and over again in these recipes and if it's not soy curls it is Gardein products or Field Roast products. Then there are 4 recipes that aren't really recipes at all. There are 2 recipes that are just instructions for cooking plain rice, 1 for how to cook baby potatoes and 1 for mashed potato. Unless you are a total novice to IP cooking who can't read the instructions that came with it these are just filler. Really wanted to love this book but actually wish I could get my money back.
