Up there with the best pure chocolate
Before I ordered the big economy 10 pounder, I did extensive blind taste tests on friends--Pascha, Guittard, and others. A draw, some slightly favoring this, some slightly others. I put some in my b'fast oatmeal or yogurt every day. I cook with it. I've melted it into berry jams I make. I always look forward to the taste. And with the 10 lb pack, I have plenty stored for months of enjoyment.

The Real Deal
This chocolate from Pasha is an excellent full bodied smooth 100% chocolate, with a good melty cocoa butter texture.I was previously ordering from another bulk wholesaler, and they recently switched to only carrying a non-brand name generic "organic 100% unsweetend chocolate". It was waxy and tasteless. I went in search of another source, and tried this Pasha chocolate. It is smooth, very tasty and properly bitter (as real 100% unsweetened chocolate absolutely should be). Also with the proper cocoa butter content that makes it melt in your mouth instead of being either waxy or too hard and solid. I haven't tried their milk of sweetened chocolates, but Pasha 100% unsweetened chocolate is the real deal.Oh, and I also ordered in the middle of July, lol. Because I didn't have a choice after the disaster with the other supplier. And the chocolate arrived 100% unmelted in an insulated carton with a cooler pack inside. Chips were still separate and non-stuck together.

Best mini chips for VEGAN choco muffins. Fantastic Customer Service, Thank You Pascha!
2nd box order, this time MINI CHIPS and they are PERFECT for VEGAN chocolate muffins.For openers, Customer Service is fantastic. Chips arrived fresh and well protected but I was worried about a bitter after taste so we emailed Pascha with our concerns. We also gave some to a friend to taste, he makes delicious chocolate confections, a true artist. The email that came back from Pascha was detailed, and very kind. It talked about the different styles of packaging, air exposure, and the amount of time that had passed between my chips, purchased years ago, and the fresh chips that had just arrived in the mail. Our friend confirmed this, he said the chips “tasted as expected” and asked if he could buy a couple of pounds. I use these chips in vegan, chocolate chip, chocolate cookies, the melt and flavor of the chip is everything, I so appreciate that Pascha makes and sells these.

LOVE LOVE LOVE 'em
LOVE LOVE LOVE 'em! We've had our GIANT (more than a cubic foot) 10lb box of these chips for a few weeks now, and use the almost EVERY day. We LOVE them! No sugar. . . PURE delicious chocolate. We mostly use them for smoothies, which we sweetened with stevia, fruit, or the high-quality protein powder we use. They're no grittier than the fruits, vegetables, spinach, or regular chocolate chip bits in icy smoothies. We are so glad we spent the $107 to get this great "stock" item on the shelf of our extra refrigerator. Perfect with every flavor of smoothie with fruit. Cherry chocolate, orange chocolate, coffee chocolate, mint chocolate. My-oh-my! We live in Arizona and these were delivered on an unusually warm early-spring day. I was worried about melting, and the box felt warm, and soft. I put it in the fridge for 2 days, and when I took it our, there were just a few chips stuck together at the corners. Used them up in the first smoothing... SO worth it!

These are not "dutched" (treated with alkali)
These are very dark, at 85% chocolate. They are not treated with alkali, which means that the flavanoids have not been removed. That's good, from a health perspective, but it also means the chips are somewhat bitter, and very strongly flavored. They are probably the same bitterness as 95% chocolate that has been treated with alkali.

Superior product for making chocolate candies, etc.
This is THE BEST chocolate I have used in making chocolate candies - I have tried several others. It melts so easily and has a wonderful flavor that is superior to other organic "high quality" 100 percent chocolate liquor/paste (for chocolate making). The product arrived well packaged in a large box with a foam container which contained a gel pack (not cold by the time it arrived in the heat of Florida in September), located on top of the product box which contained a large shrink wrapped bag that had the chips, which were kept in perfect form. I was pleasantly surprised and will definitely buy again any time of the year and would recommend. Also, this is the best price (since it's in bulk) that I could find so far. Well worth the purchase!

Buyers should be aware that it is unsweetened - and therefore is bitter - this is natural in chocolate. Not sure what is the purpose of buying chocolate chips that are unsweetened! I purchased this on impulse and couldn't return it. Not sure what I will do with it now. However, it does come as stated - unsweetened chocolate chips. I started looking into this product because most of all other products are no longer sweetened with stevia or honey, but instead sweetened with erythritol - cane sugar alcohol and I'm intolerant to cane sugar. Hopefully stevia or honey will come back in style as a sweetener, even though it is probably more expensive than erythritol.

Nut-free AND organic! chocolate
We try, as much as possible, to buy "organic" foods.But a member of our household also has a nut allergy. And it is extremely difficult to find chocolate products which are both organic and nut-free (or, for that matter, not organic, but still nut-free). We can walk down the chocolate section of any grocery and find that even products which are supposed to be "plain" chocolate, i.e., the product is NOT called chocolate/almond, or chocolate/hazelnut, or whatever, will still contain a label warning that they "may contain traces of nuts" or are "made on equipment shared with nuts." And that kind of product is a non-starter for us.So we were delighted to find Pascha, which is both organic AND nut free, and good-tasting chocolate, too. A bit on the expensive side, but worth it.
