How long will it remain fresh if unopened

I had mine unopened in the fridge for six weeks and it remained fresh. Once opened I ate it within the week.

Is this too soft to use on a grater? Is the recommended method slicing it for pizzas?

Yes I would recommend slicing it or simply shredding it by hand, delicious in pizza form.

Can it be frozen for a later date

I beleive so as long as you do not make the mistake of pouring out the water as the water around it will help it stay fresh while frozen.
