Great Taste!
I was skeptical especially with the price, but this cheese has a great taste (in my opinion) and provides a great low fat source of "healthy" protein that you can't get from eating "regular" cheese. One interesting piece of information is to check the packaging on the next cheese you buy and see if it doesn't state something like "contains cheese product". A lot of so called cheese we buy really isn't "real cheese" and not very healthy for us. Buy real cheese, or better yet, try this Almond cheese, it is definitely worth it!

1-Oz. = 20% Calcium, 6g Protein - It Is the Only 1That Has FOOD Value!!!
This cheese is great! It tastes like the real stuff, but no cholesterol & it is real food with NOURISHMENT! I had sudden lactose intolerance develop 2 years ago, turning out to be temporary (likely due infections caused by a gall bladder). Suddenly, as a person who has always had plenty of dairy in their diet, how do you put calcium back into your diet? I could tolerate this one & it does soften or melt nicely in Microwave or as a toasted cheese sandwich. Sadly, it has competitors that are showing store computers to forget this one. Dayo & Follow Your Heart cheeses which have ZERO calcium, protein, nutrients but more $$, sodium and fat (& made of potato starch)??? than this one must have advertising that blinds people to that important little truth. This 1 also costs less!. I called my local grocery and complained when it dropped Lisanatti & then ordered from Whole Foods since they also dropped it. Will be seeing if it will keep 12 weeks upon delivery & post if it does. I've bought it in multiples, and that was no problem directly from the store. Can only be ordered in a 12 package lot as of now. People, wake up and stop buying foods that do not give you anything nutritional, & buy the ones who are trying to give you food, not pretense! Even though dairy is back in my diet, this 1 is better than most of the cheese I've considered so hope it stays accessible for purchase!

Contains known carcinogen Casein - a milk protein!
Why would anyone buy a dairy alternative that has perhaps the most harmful milk protein in it and known for causing breast and prostatic cancer? I bought This cheese thinking it was vegan alternative and it is not.Search Colin Campbell’s article on casein.

high protein content, but milk protein (not vegan)
I really like this cheese: I put it on corn tortillas and broil it, then add some salsa. Compared to vegan cheeses, it has a high protein content, as vegan cheeses typically have essentially none. I initially thought this cheese WAS vegan until I read the ingredients list. The use of milk protein is not advertised on the front of the label. At least it doesn't have animal fat, and I prefer getting my fats from vegetable sources. So the presence of milk protein is a bummer, so if your goal is to reduce the demand for animal product, this may fail. If I had a comparable vegan product I would chose that instead.

Almost There But Something Is Off...
I just purchased this at WholeFoods for $4 (a single block). I thought I would try something different since I'm a bit lactose intolerant, but I generally eat cheese anyways. After trying this cheese, I can't say it is a good replacement than my standby cabot cheddar. I think I would rather take the negative effects of my normal cheddar cheese than eat this again. In terms of taste, the cheese is bland, it tastes kind of like mild cheddar cheese, but there is a bland after taste. Unfortunately, the 1700mg or so of sodium in one block of this cheese doesn't do much to add flavor to it. Additionally, the cheese consistency is a little off. It is somewhere in between a block of cheddar cheese and butter.I'm tempted to throw this cheese away, but I will probably just keep using it for my salads since it gets the job done if you throw enough salad dressing at it. I would not eat it straight. Additionally, it might be good for sandwiches since the deli meat or what have you would add flavor to where there is none.

Doesn't melt
Do not waste your time or money on this #$%^&*. There is no real cheddar flavor. The package says "Melts and Tastes Great!"The fkavor wasn't bad. It just wasn't there. And it doesn't melt! Made nachos - preheated oven 350F for 35 minites - no melt. Just dried up shreds. Don't waste your money unless you are just looking for a decorative fake cheese shred.
