Are these pasterized?

I don’t think so. As pastorization is used mainly for dairy products. The main process used to preserve vegetables and Fruit in the Middle East is drying or salting. These dried black olives tastes so delicious

Are they cured in olive oil?

No. You can put them in olive oil if you want ( I do that sometimes with/without herbs)

How do you tell the size?

The olive size is a standard olive size, the size of the container is obviously printed on the container.

once opened how do you store?

In its original container with the lid. My current container was opened four months ago and the olives are still in great condition.
