Really sharp, really nice
I've had this knife for a week now, and although that's not enough time to fully evaluate it, I wanted to share my first impressions... I will update this in a year.I bought this knife because I was tired of my crappy farberware knives, I grew up cooking with Henckels in my parents' house, but could never afford nice knives of my own until now. So I promised myself when I bought the farberwares, I'd eventually buy nice stuff. One thing I'll point out to home knife buyers is block sets are almost always a rip and you're paying for knives you don't need, and more per knife than you would buying them individually. I'm slowly acquiring a full set of 5600 series Mundials and a couple of other commercial brands to replace my old set (I have a couple of Dexter-Russell paring knives that I like as well, and the slicing knife).This knife is intended as a commercial kitchen knife, and as such it doesn't have a pretty handle. But other than that, it has the same blade as Mundial's other high end stuff. Honestly, I care about the blade, but not the handle. Sure the handle's not pretty, but you know what? It's easier to hold than a fancy handle (the rubber is non-slip), and it's sealed so bacteria can't get between the tang and the handle. You too can save money on knives by buying knives like this in the Mundial 5600 series instead of fancy looking knives, and still get awesome blades without paying for style.This knife is heavy, thick, and quite sharp as you would expect from a forged stainless steel blade. It's very pleasant to hold, and with the grip it'll never slip out of your hand. I cut up some potatoes, onions, and tomatoes with it my first time using it... It did all of them perfectly with 0 effort. I didn't have to press into the potatoes, and it cut the tomatoes smoothly with no bruising or pushing down (which is a true sign of sharpness). Simply put, it's in the same league as my parents' old Henckels (before they moved production to China) and the Wuschofs I've used as far as being sharp, comfortable, and how well balanced it is. Now time will tell how durable it is, but I've heard good things about these from friends who are chefs.I'll also mention, that unlike some manufacturers, the 8" part means the blade length, not blade + handle. If you're looking for a no-nonsense knife with a great blade and don't care about looks, this is the one for you.

Best affordable chef's knife!
I have a knife exactly like this from 1990 and it's still going strong! I was thrilled to find that it's still being sold. I purchased this one for my millennial daughter to have for her own cooking. Wasn't crazy about the green handle (my own knife has a white handle), but the color is inconsequential to the value of this knife. Plus with the green, you can find it in your kitchen drawer easier. :) Comfortable, durable, balanced, and a great knife for home chefs!

The blade is HUGE & WIDE
Love the color of the handle...but I did not realize the blade was super wide. It is very hard for me to use as a normal, everyday knife, for chopping onion, cilantro, etc...the blade is just too tall for me to safely use it..my fault for not catching the "wide" description...I kept it, though, bcs I don't want the hassle of shipping it back..

I Cut Citrus
This may seem excessive for citrus, and it might be, but it's cheap and sharp. I'd recommend a santoku knife for fruit because it separates from the fruit after each cut, but this knife is a great value as a chopping knife or a meat knife.
