Hi, can anyone tell me the ingredients of the flour improver - are there any e numbers? thanks

Calcium sulphate. Soya flour. Wheat flour with calcium, iron, niacin, thiamin. Emulsifiers: sodium stearoyl-2 lactylate. Mono and Diacetyltartaric acid esters of mono and di-glycerides of fatty acids. Dextrose monohydrate. Flour treatment agent: ascorbic acid enzymes. I should look up these to ascertain if any are e numbers. There was a handy leaflet available called Look at the Label which gave information regarding e numbers and their compound names.

Can this be used in a bread maker for wholemeal bread?

Without any shadow of doubt, will definitely help to improve the volume and lightness of the baked bread. Just do what you would normally do and add the improver at a rate of 2 % of the flour weight in your recipe adding it with the flour in your bread machine. Happy baking!!!

Is this used instead of yeast? Or instead of string bread flour?

Nope - you still need yeast. The improver helps the texture and crumb of the bread, and the taste, but doesn't help the bread to rise.

I found a recipe for bread which calls for gluten. Is this it?

gluten is in the flour, one person said it must be 15%, protein that is incorrect! Any strong bread flour is fine. I am a baker and use bread flour with 12-14% protein, have done for 30 odd years.
