Can the knob be pulled off?

Yes, the knob actually needs to be removed so that the switch can be installed.

Can this be turned off manually before set time is reached?

Yes it can. Sometimes when you turn it on it wont start The countdown, you have to give it a small push... But it works fine otherwise.

Can the metal wall plate be replaced (swapped out for my own)? In the photos it looks attached but I assume it is not..?

Yes, it can be swapped out. I remounted it to the outside of a golf cart charger cabinet.

Is this an indoor or outdoor timer?

It's meant to be indoor, but like others have said, you could probably shelter it and it should be just fine. One possibility could be to get a weatherproof switch box to protect it, but it might not be worth it; this is a pretty inexpensive timer.
