Great Bread
I have been GF for 2 years and finally being diagnosed correctly literally saved my life. That said, I went in search of GF breads. Those frozen loaves and vacuum sealed loaves went right in the trash. I then tried BRM mixes and love most of them. I used this mix in my bread maker and had failed results. I then tried the oven method and have used this method ever since. As I never was a big bread eater before GF, sandwiches were not a crucial part of my diet but my PBJs are a craving that never went away. I am 59 yo now and not being diagnosed in the prior 10 years resulted in lactose intolerance and eventually egg problems as well. I can tolerate moderate amounts of both in recipes. OK, my review. As with most GF bread mixes, the batter climbed my hand mixer blades and was difficult to work with. My son bought me a Kitchen Aid mixer and what a difference! I follow the directions on the bag but use 3 whole eggs instead of the eggs/ egg whites combo. OK so far. I have used lactose free milk and found this works best for me. Soy milk is also ok. I use spray cooking oil in a dark pan and also use it to spray my spatula and mixing blade. No more climbing the blades and easy to clean and my bread comes out of the pan very easily. just flip over and it falls out. On a few occasions, no variations in prep, my loaf collapsed in the center. I think it may have been the temp of the milk when I added the yeast. I now heat my milk to 120 degrees and so far so good. As I do not normally eat sandwiches, I seldom use this bread for that. I do toast it or when sliced thicker, makes great garlic bread slices. The bread flavor is good. The texture is good. I slice the entire loaf and freeze them in 4 slices to a baggie. This bread rises perfectly when a longer pan is used. I also create an aluminum foil " tent" over the bread when baking for the entire time in the oven. This makes the crust lighter in color and not as tough on the edges. I order this product utilizing the super saver option every 2 months and find it a little less expensive than even Walmart. As I also use other GF products for other breads I like, that option is sufficient. I may change my option and order more often but am testing the frozen mix and resulting bread after thawing. I put a package of the mix in the freezer and will keep for a year before baking the bread. I have not found a review of this process as yet.

Good GF bread mix!
My house is gluten free and we are all happy about this bread mix. We love bobs red mill and this was our first time trying this but we will definitely be buying it in the future again! It had a nice flavor and created bread with a good consistency -- not as dense as many GF breads you try!

Pretty Darn Good
Right off the bat, gluten free bread will never be as good as my father's Italian grandma's homemade spent all week on fresh bread they had every Sunday, but this is pretty darn good. It's been over 10 years since my dad went gluten free for health reasons and since then he hasn't found bread he can stand regularly. English muffins, bagels, etc sure, but bread no. He's made this three times in 6 weeks in his bread maker and each time his eyes light up. With the bread maker it's a breeze to make and has a smooth consistency, closer to a banana bread texture in my opinion, but still bread. The pictures I added are about half the loaf three days after it was made and as you can see it's still fresh and the same as it was day of, which is hard to do with any bread, so yeah four stars because it is expensive, but worth it.

Good Gluten free bread! Texture is good.
This bread always comes out great. I stuff it, so it’s a bit tricky to roll out and form it if you make a loaf stuffed like I do. Flavor is good. Texture is somewhat like a biscuit, not as airy as bread with gluten, but still good.

Great choice
I bought this because I’m allergic to rice and wheat. My daughter has been making cinnamon rolls with it and they are very delicious. Highly recommend.

Cooks up well, but bean flour is hard to digest
A year ago I swore off of eating bread for good. I am gluten intolerant and I just thought there was no point in eating GF bread which was, imo, terrible. I could never understand why people were so hooked on their bread that they were willing to eat a far inferior version of it rather than let it go. I have since gotten married and am trying to get my husband to go GF too, since it is a healthier lifestyle. One of the things he doesn't do anymore is buy bread, but sometimes still yearns for it, especially for hamburgers. I caved and bought some of this mix since BRM has been good to me for other things GF and I thought I would give this bread a chance. Boy am I glad I did. My first time baking it and it turned out wonderfully. It is fluffy, soft, with a hard crust on the outside. I let it rise too much and it rose way far above the bread pan, but that didn't seem to do much except give me a nice big loaf. The batter was *very* sticky when I was mixing it up and it all stuck on the blades, but once I got it off the blades and into the pan, it turned out very nicely. I did add slightly less butter than was called for (simply because hubby spilled a little accidentally). Maybe the less moisture helped the bread to stay together without caving? Who knows. All I know is that it worked. Of course, since the batter heavily leans towards bean flour, there is a slight taste difference than regular bread, but imo, that makes it even better. I am glad to have my other packages of this on hand. I won't make it all the time since even gluten-free carbohydrates are still bad in excess. But as a treat or when my husband plans to have hamburgers, it will be the first place I'll look for good GF bread. *edit July 12, 2012* After eating this a few times, I found that the high amount of bean flour contained within makes it hard for me to digest, with unpleasant side effects. It's really too bad as the bread itself bakes up beautifully and tastes good. However, the bean flour is just too hard on my digestive tract, so I probably won't be buying this anymore, once I use up what I have. Unfortunately I had to mark down my review from 5 stars to 3 because of this.
