To An American Cook, This Is An Odd Knife -But It Vorks very Well!
>.. Growing up in a home with a Western European Focused Menu, this knife is not regularly seen in any kitchen I have cooked in, even a few camp kitchens. But, I am stretching out to new concepts and different tools. First it was Japanese knives, and they work great at what they do, and I even have several still at work in my kitchen. >.. I was looking to buy a few small knives for the vegs and fruits in the kitchen, and when I looked on AMAZON, this knife popped up. It is listed as a boning knife, but my traditions say to use a thin flexible blade. This is neither thin (except at the cutting edge - more later) nor flexible. I turned to YouTube to see if there were any videos, there were, and I watched them. I bought the knife. >.. This is a rugged son of a gun. the tang runs through the handle and is easily 1/4 inch wide. (There is a metric number in the listing, but I haven't worked my mind to that yet.) The stainless steel is rugged, the blade is SHARP and not to be doubted. the edge of the blade is thick until the last 1/3 inch where it narrows considerably to present a cutting edge angle of about 10 degrees. So far, I have not had a need to sharpen it, but I expect it will take some skill on my part. >.. WHAT I USE IT FOR: I buy meat in primal Cryopak units and portion to my menu and needs. This knife works better than my fillet knife in the bulk breakdown. It just slices deep and easy. No hesitation, no need to use much force. BUT, this is NOT the knife you want to trim silver-skin. Sharp enough, but the blade is way too thick for that purpose. (But, watching Harry Soo wield a 27inch Dahlgren(?) blade to chop sweet peppers, most any knife can do other jobs than that they were designed for.) >.. I have not taken this knife camping, I don't do that any more, too old, want a real bed at night. So, I can't comment on using this knife to feather wood or split medium sized logs to fire wood. When I was younger, I had a Swedish Moraknife for bush craft. Could have used it to cut up meals and even eat with it, but I didn't. Too trained to have a tool for the right task. I know people do use their bush craft knife for other things, I just never did. >.. This is one knife that, when I go to sharpen it, I will use a ceramic rod, rather than the other stones, as the blade shape is so narrow after being thick that I do not think I can get a good angle from a stone. And good ceramic rods are relatively inexpensive.

BEST KNIFE EVER!
This is the best knife ever! It arrived on time and it is exactly as described. My husband took it out of the sleeve and gently shaved the hair off of his forearm. He replied, Holy S you better be careful with this. lol I told him I definitely will. A sharp knife is safer than a dull knife and it arrived sharp. Itโs a great size, weight and thickness. Thank you to Sutton Daze for recommending this knife. Excellent choice for your kitchen. I recommend purchasing this knife. It just arrived today and I can tell itโs very durable and will be a staple in my kitchen for many many years to come. It fits perfectly in my hand. Be careful as with any good sharp knife. This one is a 10 out of 10 Stars! I got it for myself but this would be a great gift for cooks and hunters who like to process their own meat. Also excellent for pressure canning Everything! Love it!

Leather traveling case SUCKS
The knifes themselves are amazing. The stitching of the leather sucks, first time using it I accidentally popped a stitch and it unraveled two more stitches which resulted in the knife poking my finger. Thankfully didn't cut me. The snapping button also SUCKS. It will not snap closed or will not stay closed. It will unsnap very easy. I recommend either buying another leather carrying case or have the knifes on display in a make-shift knife storage container using rice or have a magnetic knife storage holder. I just do not recommend this leather traveling case at all. The knifes themselves are phenomenal.

My Main Knife
Iโve been using this Knife for about two years now, and itโs become one of my favorite tools in the kitchen. This knife has been a real game-changer for me. Itโs a sharp knife with great design!!!
This knife quickly became one of my top five. Now known as my, meat knife, it cuts through mammal flesh without issue. The finger grip is a great feature. When I first saw the design, I didnโt understand hour much of a game changer that hole in the blade will be. Itโs a new level of precision and confident when cutting through anything. It has a great weight to it, well balanced, easy to handle, and stays razor sharp!!!

Wicked
This wicked knife. I bought this to breakdown large cuts of meats for canning. It cuts through meat, fat , and your fingers like melted butter. It is amazing. It has good weight to it. It is exceptionally sharp , well designed, and comes with a leather case. I love it. My Husband, a Meat Cutter-(hanging to package )said this knife was righteous. He loved the way it hugged the palm of his hand, and has a hole for your finger. This makes it feel secure and comfortable. The way the knife peels the fat away from the meat is great. Overall very sharp, very durable, big enough to cut down large cuts of meat.

Good value
Item shipped fast and worked as intended. They are sharp and look good. Not actually Damascus steel. The dimples look kind of crappy. But they work really well. So if you want decent knives that are sharp. They will do the trick.

I absolutely love my knife set. They arrive sharp and the sharpening rod, as well as sand stone, are most beneficial. I absolutely love the leather carrying bag and mesh gloves, it's all such good quality. I couldn't have asked for a better set.. thank you! Every entrepreneur chef, home chef or even professional chef should own a set!

Meets my expectations for the price.
The handle has sharp edges which I will rework with a sander and polishing compounds. The materials appear to be very good overall and it will be a really nice knife after I finish. Still great value for $ spent. Update 1 week later: After spending several enjoyable hours fine tuning this knife I have some additional comments 1) The materials are excellent, the rivets are real bronze, the wood is a lovely smelling tropical hardwood that takes a Lemon Oil finish well, the steel for the Blade is extremly hard, and sharps to a razor edge.
