Q: is there any plastic on the inside of kettle or on the lid and spout?

Everything inside of the kettle are made of stainless steel metal except the cap on the heat pipe, but this cap is above the water level, so nothing contact water is plastic, all metal. The body of the lid and spout are all stainless steel, we specially choose the plastic ring handle for heat prevent safety reason and easy lifting the lid .

Q: the loud beep, because that's a deal-killer for me. I get up earlier and make the coffee, I don't want the water heater to wake my spouse or alarm dog

Not near as noisy as others I've used/heard. It brings the water up to the selected temperature pretty quickly, which also reduces the noise. At first, the noise is very low, then it gets louder as the water gets closer to temperature. I just filled it to max with cold filtered water and it took about 5 minutes to hit 200 degrees and only about 3 of that was "noisy," but I could still have a phone conversation a few feet away with no issues
