Q: Do you just sit it on the grill grates?

I don't use it for grilling. I use it for encaustic wax (an art technique of melted wax) that has to stay at a constant temperature. But I would say if you put it on the grill with the food it would work. For the wax that I use it sits on a griddle.

Q: Can this particular thermometer be used to accurately check oven temperature??

It is oven safe. I would put it on a cookie sheet.

Q: What is the wire for?

To pick up the thermometer with tongs or a fork... it will be hot once it's on the grill (I use it with encaustic wax to monitor temp) or griddle. I also use an old fashion clothes pin to grab it and move it around by these little clips. Very handy.

Q: I am planning to use my bbq grill as an oven.recipe calls for 350 for 40 minutes.my bbq cover had no hole to stick a probe thermometer.can i use this?

I used my thermometer in my Weber grill and it works fine. I do keep it elevated and not on the direct heat.
