How long does this last before expiring?

As long as you keep it in the fridge you should be ok. It usually take us about 2-3 months to finish the jar and it hasn’t expired.

I love this stuff but always receive it warm. It does say to "keep refridegerated" - am I playing roulette or is it safe?

It technically needs to be refrigerated after it’s been opened. The ingredients are Garlic, Lemon Juice, Olive Oil, Canola Oil, Salt & Lemon Salt. None of which goes bad like Mayo or other products containing dairy would.

Once opened and refrigerated, what is the shelf life?

Keep in air tight container 3-4 weeks I usually like maybe 3 weeks max

Love your sauce, but when we warmed it up in the microwave, it became “clumpy”, in other words, not smooth. Is there a trick to heating it up?

I have always applied it cold but it can be put on hot food and it should warm up from the heat of the food. I use it on steamed vegetables, also on sandwiches hot and cold.
