do I need to have all 4 leads connected at the same time?

According to the instruction manual, yes. A bit of a pain.

Look at the 4th pic in the add - it says: wire probe range 58F ~ 752F. You can buy proves that will work with it that go to 2500F

I'm annealing brass, how fast does this read temperature? Response time?

The response is very fast (one or two seconds), but there is some "bounce" and noise in the readings.

Is this good to test a heat press?

I use it to accurately gauge the temp of roasting coffee beans, it gives an accurate reading, I have never used a heat press so can not comment on same
