Is it diluted with water. I read a review that said it was much thinner than the Date Lady.

Date Juice concentrate is a viscous, dark brown water extract of dried dates. It is concentrated to 70/72° brix. It is not.

Does it ferment over time if not refrigerated?

It dose not say to refrigerate after opening. So you probably don't have to. I always refrigerate after opening because it can get up to 110 degrees in the summertime. I don't want to take a chance of loosing it because it's gone bad.

How long will this last after opening?

If you keep it refrigerated and keep the lid on,, indefinitely the expiration date is not defined. I once had a bottle of date syrup in the fridge for 4 years. No loss of flavor.. it still tasted great and worked well for my dessert.

Where on the ORGANIC Date Syrup label does it list the FIBER % ? My label reads: Not a significant source of standard of dietary fiber.

Right you are. My label also says "Not a significant source..." Another package of dates I have claims about 1/2 gram of fiber per date. Yet another source (per internet search) claims 1 gram fiber in a tablespoon of syrup. I just count on date syrup being nothing but dates in a liquid form. We think it's wonderful stuff, including this Soleil brand. We are repeat purchasers.
