Murder, she baked.
She started innocently enough. "Honey, would you like a deep dish apple pie for your birthday instead of a cake?" He looked up. She knew he was diabetic. She knew he wouldn't eat cake anyway. "Blood sugar," he grumbled. She ignored it. "I got a new deep dish pie pan. I want to try it out. Will you be my Guinea pig?" He squinted at her, wondering if she really believed he'd fall for another tender trap. "K," he said, rambling on more than usual.The pie came out of the oven looking and smelling like a work of art, if art smelled as good as it looks. It seemed 30... no 40 feet tall! The crust was perfectly browned, and thanks to the push-out bottom (curse the pie pan engineers) perfectly shaped. He'd intended to deflect her offering, but the longer he looked, the more he longed. In fact, he longed longer than he looked, ruminating on it as it cooled on the center of the dining room table with two small candles atop it.When she came at him with the pie cutter, he thought his time was up. But no, she had the slower end in mind. She cut him a slice. It... was... incredible. Within two bites he had resigned himself to his fate. As his blood sugar rose and the room grew dim, he hoped she'd bury him deep under the house. No sense spending all that extra money on a fancy memorial plot. And those candles might come in handy for the service.

5 Star Paderno Tart Mold
Like many people, I saw the Alton Brown show where he used the Paderno Tart Mold to create an apple pie. I used my Mom's recipe with the tart mold and the resulting pie was absolutely beautiful. A word of caution: Do not try and unmold the pie for at least 4 hours or until it is completely cool. Then if you are careful, you will be able to remove the bottom of the mold without tearing the crust.I took Alton's advice and used apple brandy instead of water to mix the crust and got rave reviews on the pie. I use 2 1/2 cups of flour, 6 oz of butter, 3 oz of Crisco, 2 T sugar, 1 tsp salt and 6 oz of apple brandy. Once you have everything mixed divide the dough into 1/3, 2/3 portion sizes which will give you a large piece for the bottom and a smaller one for the top crust. I peel and core my apples with a peeler like the "Back to Basics" peeler also available from Amazon then cut the apple from pole to pole to create two stacks of 1/2 round slices. The slices and the tart pan help you create a pie both beautiful inside and out.And as usual, Amazon shipped quickly and the product was exactly as advertised. Once I find something I need, I almost always buy from Amazon especially if the shipping is free.

Happy with my bent pan
The bottom of this pan arrived bent. I tried to bend it flat but of course it didn’t sit very flat. I thought I might return it as I like my new stuff new. I was planning to make a fruit tart for company. I unfortunately read a few reviews for the pan. Some low down person made a bourbon pecan pie. HOOKED Went looking on utube and came up with Jack making a CHOCOLATE bourbon pecan pie. He used a bought pastry and it was so easy. A Trader Joe’s pastry crust fits perfectly into this pan. I poured in the filling. The pastry shrunk ½” during baking as pastry always does. That pie looked ready for a magazine cover. I am very happy with my bent pan.

OK pan. NOT really dishwasher safe despite product claim. Suggest the cheaper option!
This pan was ordered for 2 reasons— I needed it extremely quickly (thanks Amazon!) and it claimed to be ‘dishwasher safe’. Upon receipt the attached insert states: “Use a jet of air or soft nylon brush to clean... do NOT wash pan with aggressive cleaning products... Use a soft moistened cloth to clean it...”. No mention (unlike the newest Calphalon cookware) of being dishwasher safe. Dishwasher detergents are classically considered to be “aggressive”. Save yourself $5 and buy the virtually identical appearing product (also sold by Amazon) that doesn’t FALSELY purport to be safe to place in the dishwasher. The pan is just fine. The claims made on its product page are misleading.

Maintains shape well
Baked several pies in this, all of them were able to maintain their shape well (i.e., no breaking due to sticking to the pan). The removable bottom makes it really easy to remove the pies. It does take some juggling (or a second pair of hands!) to hold the side while pushing up a heavy pie, but overall, its a pretty good pan. I have also successfully made a giant jelly in it that held its shape well!

Outstanding piece of equipment
I have to admit that Alton Brown can pick them.I only bought this item because of how beautiful the pies turned out on Good Eats. I have never made a pie of any kind before, and after this pan I am not sure if I could use any other mold.Being able to take the mold apart when presenting dessert has been easy. I have been careful to not get anything on the sides of the mold to make it sticky so separating the two after baking has been extremely easy. I always waited until it was cool before touching it. I was worried about scratching the bottom when using a knife to cut the pie, but after 10 pies in the last year, it is still in perfect condition.It is worth the cost.
