Will this card work as storage in a 2021 MacBook Pro?

This is a camera memory card. Not sure if it is wise to use a card like this as a storage for your mac. Having said that, through a reader, this card technically can act as a storage for any laptop. I would never do it though.

What are the sustained read and write speeds of this card? are the read and write speeds of 300mb/s and 250mb/s only in bursts?

My tests (using Blackmagic Disk Speed Test app) consistently got read and write speeds ~80% of the advertised max speeds, which is acceptable and good for SD cards. So, sustained write speeds of ~200-220mb/s. and sustained read speeds of 240-250mb/s

Will this card work with olympus omd emi miii.?

It will work with any device that uses SD cards. However, unless you are shooting 4k, you may not need this card. You could get away with a lower priced one.
