I have an adjustable power supply and I want to know how many volts and amps they usually need so I can set my power supply?

5v (rated 4.8, above 6 will burn it up!) 5mA idle current draw, 350mA running, 1500mA stall current. Actual draw will vary with physical load. I'm not a mechanical engineer, but you could monitor the draw with an ammeter and just calculate the real-world limit watching the meter.

For the MG995 RC Servos The Stall torque: 6V 12kg/cm, 7.2V 13kg/cm. It depends on your actuation distance.

How much can it lift weight wise?

Servos don't lift weight. They're used in conjunction with horns to move flaps, rudders, airelons,and flaps through linkage connectors
