Has anyone tried making home-made Shirataki noodles with this extruder? Does it work?

Not a chance. It will break right away. This extruder only works with pretty soft dough made with. And that makes it hard to make any long noodles with it, because they really want to stick to each other when you make them. So I only use it to make rigatoni or macaroni; that works pretty well.

If my locking clamp is missing, would the clamp from the Marcato Atlas 150 machine work with this?

Can you use a semolina and water dough (no eggs) with this machine?

Yes! My mixture is 2/3rds semolina (4oz) to 1/3rd (2oz) 00 white flour and a 2.4 ratio (2 1/2oz) of water. The ratio is important because the dough for extruded pasta must be very dry in order for it to pass through the die plates without sticking together. I use the paddle attachment on my Kitchenaid mixer (not the dough hook). The dough should come out dry and crumbly breaking down into little pieces (not a smooth elastic ball of dough). I find this works best for me. Love the machine BTW. Good luck!
