I didn't know what to expect when I ordered this book, but WOW what an eye opener to cooking on salt blocks! I've only watched a few chefs using Himalayan salt blocks for cooking, and most of those were for presentation purposes. This book will open your mind to a myriad of cooking techniques that can inspire many chefs, professional or not. The book is well laid out, gives a clear introduction on the how and why of cooking using salt blocks as well as the pitfalls and considerations when buying and using the blocks. But what impressed me most was the recipes. The author is clearly an accomplished chef, but the imagination going into the recipes is over the top. I possess over a hundred different cookbooks and this ranks among the top. I've picked up this book several times over the last few days to read and digest the recipes and the same thing happened each time; my mouth watered and my brain kept saying yesssss.
