Ottimo libro di cucina vegana giapponese
Il libro è esteticamente meraviglioso. Le ricette sono eccezionali e ben spiegate. Sono presenti anche molte foto bellissime. Consiglio l'acquisto se si è interessati alla cucina vegana giapponese (e se si conosce un po'di inglese, ovviamente!).

A new vegan way of eating
This is a wonderful book. It's beautifully produced, and very engagingly written, but much more importantly, the food you will make from it is amazing. The author clearly knows his subject well enough to craft recipes that are authentic in terms of flavouring and concept, but don't slavishly try to replicate every animal product with a vegan alternative. And he gives you the tools and the confidence to adapt dishes too. My favourite new model at the moment is a noodle salad: chilled ramen noodles + a Japanese dressing (there are a few in the book) + whatever else you like = an endlessly versatile dish I would happily eat every day. Some of the ingredients might be a bit hard to track down, and there's a bit of a 'technology tree' structure whereby full dishes rely on building block recipes from earlier in the book, but your perseverance will be repaid with nothing less than a new way of eating.

Très bon livre, j'ai pris une version d'occasion qui est arrivée dans l'état décrit. Le livre est très bien édité, les photos sont très jolies, très beau pour offrir. Les recettes semblent faisable sans avoir besoin de moults ingrédients difficiles d'accès.

Beautiful Book – easy to follow recipes
My reason for writing this review is twofold: one is to note what a wonderful cookbook this is and second to let people know that the one-star review on Amazon is totally untrue – perhaps about another book?? This book does not start with anything about Woody Harrelson or any of the nasty things the reviewer mentioned. [I have reported this review, but to date, Amazon has not removed it.] From the Introduction: "Japanese Cuisine: Fatty Tuna! Wagu Beef! Dried Fish! Pork Broth! Fried Chicken! Squid Guts! Eggs! Eggs, Everywhere! It’s a minefield For Mindful Vegans. OR SO IT SEEMS. Of course, there are many Japanese delicacies that are off-limits for anyone who refrains from animal products. But Japanese cuisine in general is actually quite vegan-friendly – an enormous amount of Japanese food is inherently vegan, and much more can be made vegan with just a simple substitution or two…" I have purchased all of Tim Anderson’s Japanese cookbooks and recommend all of them. I find them very accessible with a lot of good information. The recipes I’ve tried have all worked and were very good. This is not a shojin ryori cookbook. Mr. Anderson explains that this traditional Buddhist temple food is “intrinsically linked to bigger concepts of balance, spiritual well-being, asceticism, seasonality and mindfulness that [he] couldn’t do justice to.” The book has sections on • Basic Seasonings & Sauces • Snacks, Small Dishes & Sides • Big Dishes • Big Rice & Noodle Dishes • Desserts & Drinks So, whether you are vegan or not, this is a great cookbook that includes lots of photos and lots of vegan recipes, including ones for dashi, tofu, several versions of ramen – (one using eggplant and zucchini) and vegan sushi as well as a recipe for Mock Meat Menchi Katsu (Breaded and Fried Vegan Burger Patties).
