Q: Would this chocolate work in a chocolate fountain?

Yes, it would, but like all chocolate used in chocolate fountains you will need to add a neutral flavored cooking oil to the chocolate to make the chocolate flow. Most chocolate fountains come with instructions on how to make the chocolate flow easily just heat your discs/callets in a double boiler and add the required amount of cooking oil one tablespoon at a time until it flows through the flow gauge ( a small device that looks like a baby funnel with a handle). You should be good to go. Merkens is delicious.

Q: I did not temper this chocolate and I'm having an issue with fat bloom in the resulting product. I thought it wasn't necessary to temper this?

You shouldn't have to temper, these are candy melts or sometimes called summer coating. By bloom do you mean white streaks? If so, was it discolored before melting? If that is the case it may have been stale when you recieved it.

Q: How many strawberries could a 5 pound bag coat ??

I would estimate about 2 dozen, medium large strawberries per pound. Obviously this will vary depending on size of berries.
