Can this be used as a proofing oven? Can the temperature be set to 80F?

This is just a very simple food warmer. I wouldn't try using it for anything else. If you do decide to purchase one I hope the one you get is assembled better than the one I got. We actually had to use a hammer to "flex" the shelving to fit in the tracks that was already studded into place....very crooked! Now that I have the shelving in I cannot remove it. I had to have a warmer then or I would have sent this poorly constructed metal box right back! Good luck if you decide to purchase one!

Will this hold a pizza box?

It depends the size of the pizza box. The shelves measure 21.5" left to right and 14" front to back.

Does the box generate a lot of condensation?

Condensation depends on what you put inside. If you don't put anything excessively moist in there or any liquid, then you shouldn't have any condensation.

Can it run off of a 2200 watt inverter generator?

Honestly I never tried it on a 2200 watt inverter generator but I don’t see why it won’t work.
