Still possible to buy a carbon steel knife.
In my opinion a carbon steel knife sharpens easier and better. I am happy to have been able to replace the small steel paring knife I lost with this one.

Super paring knife.
This is absolutely the best paring knife I’ve ever used. Somehow I misplaced my old one that I had been using 45 years!! Sharp as a tack and very easy to use. I’m so happy I found this on Amazon!!

Seems good. Definitely not stainless so it should be okay to sharpen when needed.

Beware ! It’s had 2nd etched on backside of blade, and it’s very much a 2nd in quality, even the wood .
