Besides the sail cloth, what else does this product come with, in terms of accessories?

Just the sail cloth, You need to buy whatever hardware needed for installing.

What would you say is the minimum height to hang it above your deck? Does it sag? I am 6'5" and my roofline is 7'6".

An 8 x 10 is small enough and light enough that it sags very little. Make it as taut as you can. You souldnt have any trouble. For bigger ones you need very high poles cemented into the ground. We had bought a 10 x 20 and it was impossible to install between the house and garage. It was way too heavy and sagged all the way to the ground. We would’ve had to attach it to very high posts and didnt have room, so we cut it down and will use it over our pergola, tying it on with plastic ties.

This shade is titled 8'x10' rectangle, but under specs, dimensions are 175.2 x 48 x 145.2 inches. (14' x 4' x 12') What are its actual dimensions?

Mine is about 8 X 10 feet, A little more because I puled it tight. I am not sure what the other measurements are, I know it is not 4 feet thick.
