CangshanN1 Series 59922 German Steel Forged Utility Knife, 5-Inch

Cangshan N1 Series knives are incredibly sharp and cuts through everything like it was butter! They are well balanced and fit fantastic in my hand to make slicing or chopping a breeze. They hold their sharp edge for a long time....and...I love the fact that it's one solid piece without having to worry about a riveted handle breaking off or getting discolored over time. These knives will last me a very long time and it's one of the best purchases I have made ever! I love to cook and the Cangshan N1 Series knives that I have purchased have made that so much easier! The feel of the knife is a very comfortable to me. It doesn't slip in my hand....but might (like any knife) if my hands were wet/damp.

I own the whole knife block and bought this one to replace a knife my son accidently threw away. They don't rust and are very sharp. Comfortable in the hand when cutting.

Have only used the knife a handful of times so I cannot attest to longevity or how well the blade will retain its edge. So far, I’m impressed have used to cut/dice meats and chicken and chop up vegetables. Managed to cut myself pretty good when an onion I was slicing rolled non me. Blade is sharp, very sharp and the knife is well balanced. It’s a single piece of steel so it can get a little slippery. After receiving and using mine a few times I ordered one for my dad for Christmas. Overall, a great knife for the money.

Knife was great until it broke under normal kitchen household use. It broke while cutting an apple.

The good, the bad, but not ugly. Cangshan knives were on their way to being my favorite culinary blade choice. I found the 59120 chef's knife searching Amazon, bought two, and loved them. Sooooo sharp! great blade, amazing blade. I love this knife. So, I bought the N! utility knife, a beautiful knife, hollow handle, great price, and looking to buy their boning knife in the same N! series. When the utility knife arrived, it was beautiful, beautifully packaged, sharp blade..., yes, very sharp. I love this blade. Now for the bad... the small hollow handle does not fit well in my hand, unlike other Cangshan knives, and rides to the left when cutting. The handle is slippery ( I guess because it is smooth metal) and will possibly, when cutting and cooking, lead to a slip of the knife, which may (with this sharp blade) lead to a serious cut on the cook. I love Cangshan blades and would compare them to any serious kitchen cook's knife, but the handle of the N1 series leaves a bit of concern for this amateur cook. Perhaps the larger knives present no problem, but I only proudly own the black handled 59120 chef's knife, and in the future I will purchase other not so "ergonomically" designed knives, though innovative, from Cangshan. The proof is in the cooking, so the old adage goes. This knife is so beautiful, the blade a cutting wonder, but the handle...well, I like precise cutting and want control when slicing and dicing. I do not want to get my fingers cut. Guess you got to try one of the N! series smaller knives to know what I mean. Maybe the "slippery" feel is not an issue with you. But, I will in the future buy more Cangshan knives, just not with hollow handles. The beauty is in the blade.

I would have a full set of these if I could afford it.
