Do you need to refrigerate after opening?

Yes, you will need to refrigerate after it's opened.

The container is not marked gluten free; however, ingredients are non-RBST milk, sugar and a preservative. None of those have gluten. It is possible it is made in a factory with gluten containing products with enough cross-contamination that the company is not allowed to label this product as GF per government standards.

I have been using mine for a couple months already, it should last 6 months easily. Keep it in the fridge and you'll be fine!

Is this good for baking desserts?

Yes this is the same product as in the cans. We use it to make 'better than anything cake'. The squeeze bottle makes it very easy to dispense exactly where you want it and just the right amount.
