***USE Unsweetened almond or cashew milk to Cook!!!
The trick is low calorie *Unsweetened coconut milk or cashew milk* (25-30 calories per 1 cup)! Forget a bunch of other high calorie sauces/dressings, which just make it taste artificial & negates the low calorie appeal…the low cal milk makes the taste, texture, & appearance exactly like buttery pasta…I’ve cooked these for my parents and my own family numerous times this way and they love them! I heat my pan up between medium/hot…spray a bit of PAM. Drain & dry the noodles (I use 3 bags at a time - 27 calories total) & start w/ some seasonings (onion butter seasonings & dash of salt). I incrementally pour in my low calorie cashew milk at 1/4 cup at a time, stir, & once the milk evaporates, I repeat the process until I use a total of 1 cup for 3 bags of noodles. I lower the temp down a bit about halfway through…it’s usually about 15 mins on the pan to get them soft & buttery like real pasta. I’m stirring the majority of the time. Near the end of the process, I sprinkle on some low fat feta and stir until evenly distributed. Makes about 6 servings at a grand total of 20 calories per serving. Alternatively, I do the same process if I want Mac & cheese, but instead of feta like I do for above recipe, I use a 0 calorie Mac&cheese seasoning - believe it’s technically a popcorn topper, but works just as well for this) & sprinkle on a bit of fat free skim shredded cheddar cheese (a little less than 1/4 cup at 40 calories distributed over 6 servings). Literally tastes like velveeta for about 10 calories per serving. If you want an even more buttery taste, use a couple of drops of butter extract for each of these recipes. You will never miss the real stuff again once you cook these bad boys the right way!

It is a substitute for real pasta
We ordered a variety pack the first time (Angel Hair, Spaghetti, Rice and Fettuccini). We tried them all and prefer the Fettuccini. It is basically flavor-less, but it gives you the satisfaction of eating pasta when you're not allowed to (I'm diabetic). The consistency is like aldenta (not sure of the spelling). We are OK with that. According to what I read, it lowers your sugar and cholesterol. I haven't had my cholesterol checked in the last few months, so I can't vouch for that. However, anytime I eat this skinny pasta I don't have to use insulin before or after the meal, my sugar does not rise! They say you have to chew it up well or it can swell and possibly cause issues in some people. So far, no issues with us. It is hard to chew up pasta really well. It's made from an Asian root. Since our first box, we ordered a second variety pack, and then just a box of Fettuccini. We've used it a couple different ways, but our favorite is a sauce using beef or chicken broth, sautéed onions & peppers, spices, rotel tomatoes, and some type of meat (shrimp, diced pork tenderloin, diced steak, chicken, sausage links, etc.).

Slimy and rubbery.
First off I’d like to start with the texture of these. I would probably compare to eating squid. That’s just a guess as I have not had squid, but they are very rubbery. They are not a traditional noodle as you do not cook them too soften them. they come, soft, slimy, and cold in a bag. I have been searching for a good tasting healthy alternative to traditional noodles. I do not know long-term how these would fit as I could not barely eat more than five bites before I head to pour the whole thing out and that’s saying a lot for someone like me I am a strong believer in not wasting food ever, but if the texture doesn’t turn you off, the flavor was much more tolerable so there’s that I guess

Wanted to like these. Bought the 24-pack of fettuccine. The product is so hard and dry that it is not edible. Stuck with 21 packages that I will not use!

I love these noodles normally, but never tried Skinny brand. These were so chewy that I couldn't eat them, I tried several packages and did different ways of rinsing. and put them in a hot skillet and then tried several other ways but nothing worked. I wasted 4 of them so I regret buying such a big box. sad.
