will it work on really hard wood like 2000 janka

To be honest ive never worked with 2000 Janka .but i have had some Excellent results with red oak. Even with cross cuts against the grain.it cuts through semi hardwood" Poplar" like butter. Its now my go to saw for these types of cuts.hope this gives you some kind of idea as to this saws potential with your projects material.good Luck.

Can the handle from the fine work set work with the other blades?

I believe the attachment pattern is identical. I purchased another blade from outside the set and it fit just fine.

Will this work well with drywall too?

Yes, you could use it for that. However, it is a top quality knife and I wouldn't use it for drywall. You can buy a knife made for drywall, which is very cheap (compared to this one), and works very well. Don't use this KAKURI keyhole saw for drywall

what type of oil is used on the handle?

It appeared to me to be raw wood. I used a few coats of tung oil.
