Will this fit Model number 01781, which is the 23 quart Presto Pressure Canner?

Yes it will work on 01781.  CORRECTION on the response by Presto here:  According to Presto records 0178107 also requires pressure regulator 50332 (this model).  The response here listed pressure regulator 09978 as being the correct one for 0178107, but that is just the number for the default 15lb pressure regulator which comes with all of the 23 qt models.  The model 50332 will also work for the 23 qt induction plate added model(so the canner works on induction cooktops) 01784.

Will this regulator fit and work on model 1755 sold by amazon?

Yes, that regulator will work on the 1755.  It will work on any Presto model which has part # 09978 as the pressure regulator.

I'm new to canning.  I live at 5,000 feet.  Will I need this for a new Presto 23 qt.?

Accepted Answer

No, at 5,000ft you will be canning at 13 psi on a dial gauge. IF (and that can be a big if) you have a convenient place to get the gauge tested each year (check with your county extension office) then you are better off doing that and using the gauge so that you don't (slightly) overprocess the food by canning at 15 psi (using all 3 pieces) with this weight set.  If you do not have a test facility near by, or do not want to watch the dial and adjust the burner as necessary to maintain 13 psi during the entire process, then yes, buy this set.  The regulator that comes with the dial-gauge canner is not calibrated as precisely and cannot be relied upon to maintain even 15 psi. I can at 11 lbs psi. This regulator holds at 15 psi. Will that work for my elevation?

If you are below 1000ft elevation, you can at 11 psi on a dial gauge, 10 psi on a weighted gauge (notice USDA has 2 sets of tables).  This weight set converts the Presto dial gauge canner to a weighted gauge when used in place of the 1-piece regulator, so just remove 1 ring from the weight (use 2 of the 3 pieces) and ignore the gauge.  No need to have it tested every year - enjoy!
