Good blade
Handle is not great for busy environments. Good metal. Really strong. I don’t have a lot of space to work in so the extra 2 inches is a bit of a burden.

Great knife for cutting brisket
Only have used it once so far on a brisket I smoked but went thru like butter and made that process so easy after a long day of watching over the smoker! Easy to handle/use and clean.

Not as sharp as others we have
I did not want to review this knife until we had something to test it with properly. My husband bought a roast so that we could do just that, and he sliced part of it, our daughter (a chef) sliced the other part. She said that it was not as sharp as the one she carries in her roll. My husband felt it was not as sharp as what we already had (which is a Wusthof Trident classic, so it was compared to a very good knife). I have been fine tuning and attempting to improve the collection of knives which we have since our daughter (a chef who has worked at several five star restaurants) moved back home. We have, in fact, replaced a number of our knives, but while the Tuo is an attractive knife, it was not as good as what she already had, or what we already had.I would say that if you are looking for a knife which is showy, the Tuo is very attractive. It is well balanced and easy to work with but we did not find it as good as the Wusthof Trident classic, which is, granted, a high bar to reach.

Not what I had imagined
The knife feels very light, and floppy. The edge shows rollover and I am tempted to send it back.The knife isn't sharp, and I really would have expected a mirror polished edge.Japanese knife but made in China ??????

Awesome knife
This knife cuts through steak and prime rib like butter. Really nice looking piece as well, looks a mini samurai sword. Definitely would recommend this to anyone who is serious about their meats.

I call it ... Excalibur
Never really appreciate a quality slicing knife until you try it, and what an upgrade it can be on even the most high-end chef's knife ... for the right task. I've been experimenting with brisket for several weeks now, and I'd be lying if I claimed to have enjoyed consistent success, but this one turned out well. Excalibut ran off clean, even slices, made almost effortless by the length and narrowness of the blade, combined with a razor-sharp edge. I'm not giving it five stars because I've only had it for a couple of weeks and haven't had the opportunity to use it that much, so I don't know how long it'll hold its edge or how much of a process it'll be to have it sharpened.
