These mitts come in 13 inch, 15 inch and 16 inch sizes, which of these would fit my hands, if I wear medium sized gloves?

The 16 inches is the measurement from tip to end. I bake a lot and always hit my arms on the hot oven racks- so I went with the 16” to cover more if my forearms. When you cook- you do not want tight mitts- you need to take them off quickly. The measurements are not for hand size- just length.

what is the heat range

Mine melted the first time I used them in the oven. I happened to touch the wire rack, so I guess 350 degrees Fahrenheit is too hot...

Do these soften up with use or should I wash them?

They will soften up I do throw mine in a laundry net bag and wash them frequently when they get soiled.
