According to my quick research. hon-mirin is the upper end of the sweet wine, mirin. Aji mirin is the lower line, not a real Japanese mirin. I only began Japanese cooking in the last year,but I feel comfortable asserting that Ohsawa is a high end Japanese product line. I always try to buy it. There may be yet higher end Japanese brands, but I think you can use this as Hon-mirin anytime. As opposed to Kikkoman aji mirin. Best regards, Pam Hill

no, there is no corn syrup. it is made of almost all rice products. the extremely well-reviewed new book, "japanese farm food" recommends, in cooking japanese food, that the cook uses ohsawa organic products as often as they are available. i find them excellent. they are available on amazon. regards, pam hill

Can you remove one of the pictures of food and add a picture of the ingredients back label?

I don't control the pictures but here's what's in it sweet rice wine, distilled white rice wine with some Koji which is what is used to ferment saki and regular rice wine. This is the real stuff if you buy kikkoman you get some flavorings with sweetened syrup not real mirin.

Is this real mirin? Does it have an alcohol content?

It is salted, thereby rendering it unpalatable (to most people for straight drinking) and to avoid alcohol taxes/duties. They don’t have to list the alcohol content.
