When it is cooked, is it soft like rice?

If you cook it long enough and add enough water, yes it is. I do at least 3 parts water for 1 part millet. Toasing the millet grains for a few minutes on medium heat before boiling seems to bring out a very nice smell / flavor, but is not necessary. Heat the water to a boil with the millet and stir a bit. Then reduce heat to a simmer (low-medium) and cover for about 20 minutes. Fluff with a fork and take off the burner and let sit covered to cool for a few minutes and continue to absorb the water.

I looked up Proso millet it looks just like it. I don't have the original PKG to check. Grains are very small. Hope this helps.

Does This Contain Gluten?

Does it really has 9% fiber? All other brands (like food to live etc.) show only 7% fiber.Seller please confirm.All sources say around 7% fiber only.

I ve tried millet of different brands, but, I can definitely feel a better quality and good fiber content in this product.
