Varietal: Caturra - Washed Processing - Colombian coffee is considered the best washed Arabica coffee in the world. Once the ripened cherries are collected by the coffee pickers, the red cherries are peeled and fermented in a controlled environment then water is used to remove the mucilago (a sticky layer that surrounds the bean). This washing process gives the name to this kind of processing method. Once the mucilago has been removed the clean beans are ready to be dried either by mechanical means or by direct sunlight. After the beans are dried the coffee is taken to the milling facilities and milled, after this process the coffee will be ready to roast.
