From one of our favorite curemasters comes this delectable sliced lomo by La Quercia. Lomo is the loin of the pig, salted and cured just like the leg would be for prosciutto or Serrano. Keeping with the Spanish tradition of Lomo Curado, La Quercia rubs the loins with smoked paprika, but also adds bittersweet cocoa for a deep, bold finish. Thinly sliced, this lomo is perfect to serve with tapas platters, wrapping olives or slices of manchego, or shredding and topping a grilled flat bread.
