Really sharp, really nice
I've had this knife for a week now, and although that's not enough time to fully evaluate it, I wanted to share my first impressions... I will update this in a year.I bought this knife because I was tired of my crappy farberware knives, I grew up cooking with Henckels in my parents' house, but could never afford nice knives of my own until now. So I promised myself when I bought the farberwares, I'd eventually buy nice stuff. One thing I'll point out to home knife buyers is block sets are almost always a rip and you're paying for knives you don't need, and more per knife than you would buying them individually. I'm slowly acquiring a full set of 5600 series Mundials and a couple of other commercial brands to replace my old set (I have a couple of Dexter-Russell paring knives that I like as well, and the slicing knife).This knife is intended as a commercial kitchen knife, and as such it doesn't have a pretty handle. But other than that, it has the same blade as Mundial's other high end stuff. Honestly, I care about the blade, but not the handle. Sure the handle's not pretty, but you know what? It's easier to hold than a fancy handle (the rubber is non-slip), and it's sealed so bacteria can't get between the tang and the handle. You too can save money on knives by buying knives like this in the Mundial 5600 series instead of fancy looking knives, and still get awesome blades without paying for style.This knife is heavy, thick, and quite sharp as you would expect from a forged stainless steel blade. It's very pleasant to hold, and with the grip it'll never slip out of your hand. I cut up some potatoes, onions, and tomatoes with it my first time using it... It did all of them perfectly with 0 effort. I didn't have to press into the potatoes, and it cut the tomatoes smoothly with no bruising or pushing down (which is a true sign of sharpness). Simply put, it's in the same league as my parents' old Henckels (before they moved production to China) and the Wuschofs I've used as far as being sharp, comfortable, and how well balanced it is. Now time will tell how durable it is, but I've heard good things about these from friends who are chefs.I'll also mention, that unlike some manufacturers, the 8" part means the blade length, not blade + handle. If you're looking for a no-nonsense knife with a great blade and don't care about looks, this is the one for you.

Bargain Fine Cutlery
Gourmet magazine recommended this fine Brazilian knife. Only $24 for the plastic-handled one and about $42 for the nicer fused wood handle, but they are the same knife. You can get them slightly cheaper at other sources, but there you have to pay shipping, so Amazon is the best bargain!It is sharp and easily sharpenable, good thickness of steel for this sized blade.The upper edge of the blade has quite sharp 90 degree corners, so you may want to do as I did--grind off the sharp corners and polish it more rounded to allow comfortable left hand pressure on the blade while cutting.A great knife for the price!

BEST Knife to Price Ratio
After reading about this knife in Bon Appetit Magazine under the "Best Knives Under $100.00" I thought its worth a try for $20. I first bought on of these 3 years ago and was blown away by how smooth it cuts and how light it is in the hand. Way better then any $100.00 knife I have used. 3 years later and using this knife everyday, I still am impressed with how the edge has held up on this knife. I have never sharpened it and only hone it about once a week.The blade is a great size for any level cook and the high handle keeps your knuckles from slamming on the cutting board. This is a must have for every home. Once you use a knife that works for you instead of against you, it will change your life! (Well in the kitchen at least)

Best affordable chef's knife!
I have a knife exactly like this from 1990 and it's still going strong! I was thrilled to find that it's still being sold. I purchased this one for my millennial daughter to have for her own cooking. Wasn't crazy about the green handle (my own knife has a white handle), but the color is inconsequential to the value of this knife. Plus with the green, you can find it in your kitchen drawer easier. :) Comfortable, durable, balanced, and a great knife for home chefs!

Good for the jobs you wouldn't give to your expensive knives
I bought this knife for lobster. Whaaat? Yup. I needed a knife to split and/or process lobster. But I didn't want to use a $200+ knife for that. Or even a $100 one. I had looked up "lobster knifes" and do you know what I found? Different versions of this knife for 2, 3 or 4 times the price! I've also researched debas and chefs knives for crustaceans but from what I read, the shells really chip away at your blade, regardless of the quality of the knife (actually, more expensive knives got damaged more). I've tried using cheapie knives but they didn't have the weight to crack the claw properly. And they weren't long enough to cut through the lobster in one go. Anyway, this is the knife you want to use when the dirty jobs may damage your goods. Or, if you don't trust the person using the knife with one of your bladed babies. Or, if you run a kitchen and you're afraid of your knives "walking away". So process your lobsters. Hack away at your chickens. Slash your large veggies. Don't try to chop through any beef bones. Or maybe you could. For $30(ish)? Why not?

Love their knives. Well balanced and sharp
Own a few mundial knives. Love the feel and balance. Unfortunately I also ordered a 6 inch to go with this 8 inch knife and still haven’t received the 6 inch after three weeks. Says out to carrier two weeks ago but no knife to date😒😒

Excellent knife.the lower edge was high ihad to grind it to get the knife rocking.its totally worth it.o work as a chef and now it's my knife u am using.keeps the edge for a week at least with intense use all day .
