how deep are the pockets?

The pockets suck. The only way your keys will stay in, especially if you sit on equipment at the gym, is if you secure them with a carabineer. Your normal sized phone will be sticking out at the top. If the seat on the equipment is slightly tilted back, you're better off taking the phone out of your pocket and setting it down next to you so that it doesn't slip out.

I'm 5'3 with a 29in waist and 39in hips. What size should I get?

I got the small. I have a 26" waist and 35" hips and they are form-fitting but not tight, tight---very comfortable fit. Go with a medium if this is the fit you want. If you want them looser, go with a large. They don't really seem to shrink that much after washing, FYI.
