"The color changing app features require the app to perpetually being running..." Any alternative to fix this issue such as using a hub?

I will try to answer this. The app is required to change colors and create settings. The app will also turn lights on and off and set scenes and many more things. it's required to adjust the lights. That said, the lights function fine and as any other light without the app. You can turn lights off and on with a standard switch and can operate the lights without the app, you just can't adjust colors or schedules. The lights can be set thru the app to default setting with the standard switch. Hope this helps

If I set this up via Wifi, then take it to a place without Wifi, will it follow the schedule?

I haven't personally tried, but I don't think so. To my understanding, LIFX remotely pushes the scheduled changes when they should occur. You can make changes to the schedule, even if the lights are not connected, so it would follow that the schedule is not actually stored on the light.
