Will this transfer? I want to retouch a saddle but I need something that won't transfer to my clothes when I sit on it.

This has dye pigment in it, so depending on application, heat, and conditions, it is possible it could transfer to clothing while riding. However, if you choose the neutral color, that does not have any dyes in it and will not leave any marks.
